Top-Op Golgappa Fry refers to raw, pre-made wheat flour pellets (also known as puri or pani puri shells) sold by the Top-Op brand that you deep-fry at home to make crispy, hollow spheres for the popular Indian street food, pani puri. To use them, heat oil to medium-hot, fry a few pellets at a time until puffed and golden brown, drain, and then fill with potatoes, chickpeas, chutneys, and spicy water.
